Fresher taste for sterilized food products!
Shaka™ technology was invented in United Kingdom by a company called Zinetec. STERIFLOW SAS signed a manufacturing license in 2005.
During processing time, the containers are vigorously shaken at a frequency of 100 to 150 cycles per minute. The agitation of the products is made through a horizontal movement of the baskets. This product agitation allows to sharply speedup the heat penetration. Cycle times are reduced by 4 to 6 compared to usual autoclaves (including rotary).
The reduced process time has a highly positive impact on the quality of the products (colour, taste, vitamin preservation…) compared to what is usually obtained with static or rotary autoclaves. The Shaka™ can be used with all types of containers available (cans, glass jars, plastic trays, pouches…).
Several tests were performed on babyfood, soups, sauces, dairy products, vegetables and ready meals. Results showed better tasting sterilized products having a spectacular “fresher” mouth feel compared to what is found on the market. Extensive studies were performed by national R&D centers such as CCFRA in United Kingdom, CTCPA in France or Norconserv in Norway confirming the impressive results.
